Description

Pad Thai is a dish of fried noodles with additions combining sweet (white or palm sugar, ketchup is also used in the USA), sour (vinegar, lime or tamarind) and salty (fish sauce or salt). It is a combination of soft rice noodles, marinated vegetables, crispy bean sprouts, peanuts, fried tofu, dried shrimps, and any meat or various seafood. This dish is prepared in a flat pot, not in a wok. Chicken, pork, shrimp and tofu are often used as additional ingredients. You can also use beef, squid or octopus. Depending on the regional varieties, the cook may add ground chili or mild paprika for color.

How to use: Fry any meat or shrimp with Pad Thai paste, add tamarind paste, fish sauce and palm sugar. Then combine with previously soaked (approx. 10 minutes in hot water) wide rice noodles, add egg and vegetables. Stir fry over low heat.
