Description
Aldo is a hybrid of arborio rice and stirpe 136 rice.
It is a short-grain rice grown in Italy. Baldo is particularly starchy and can absorb a lot of water, making the grains very creamy and delicate when cooked, and it holds its shape well.
It is an excellent rice for risotto, paella and Turkish pilaf, but it is also good in stuffing and “cold” salads.
